OUR HONEY is 100% Pure AUSTRALIAN HONEY

The honey we supply is produced by beekeepers who use superior quality control standards. It is strained at beehive temperature and retains all the natural goodness of pollen, propolis and enzymes and tastes amazing! Our honey is of exceptional quality, contains no contamination, no adulteration and the greatest possible care is taken with temperature. It is packaged and stored quickly without exposing it to air in order to preserve the natural aromatic qualities.

The honey comes in a groovy squeezable bottle so one can easily access. This cool bottle has a special non-drip valve cap. It is the cleanest, no mess and most convenient way of using honey - idea for spreading, cooking and on the run.

Do not refrigerate honey because it speeds up crystallization which is a natural process in which liquid honey becomes solid. Eventually, all honey will eventually crystallize. This is a natural feature of pure honey and doesn't not indicate that the honey has deteriorated or expired. If this has happened, it is easy to decrystallize honey.

What to do if your honey becomes grainy like sugar and find it difficult to squeeze out of the bottle. De-crystallization:

With the honey being 100% pure there may be some crystallization. It is just proof that it is OK. Warm it gently in the sun, the bottle is designed for this purpose, or stand it in hot water. Or you could bring a saucepan of water to a boil and then remove it from the heat. Remove the lid from the bottle of honey, and place the bottle in the hot water until the crystals dissolve.

Honey can also be warmed in the microwave. e.g. Microwave one cup (250ml) of honey in a microwave-safe container, on high. Stir the honey every 30 seconds. Be careful not to boil or scorch the honey.

Mallee honey
There is a plethora of species of Stringybark trees, the predominant species being Red Stringy Bark (Eucalyptus Macrorhynhca). They are named after their characteristic deep fissured fibrous bark - unlike the Australian smooth barked gum trees.

Stringybark honey is known for it's stronger, darker honey, which is a popular choice. It is a great everyday honey, and is superb for cooking as it adds extra flavour and it froths naturally when heated - great for cakes! Red Stringybark has excellent keeping qualities and will keep well.

Mallee (Eucalyptus celastroides/Eucalyptus gracilis) is a tree that is prevalent thoroughout the more drier regions of Australia. The honey is light in colour with a smooth, thick consistency. In the cooler weather it tends to candy quickly due to the high glucose levels. A delicious honey for use in beverages or on crumpets.
