I ordered the Mallee and Red Stringybark honey from Unique cures and have been treating myself to them daily on my cereal.They are fantastic tasting,both unique, and I am sure they have provided me with additional energy! Do not refrigerate honey because it speeds up crystallization which is a natural process in which liquid honey becomes solid. Eventually, all honey will eventually crystallize. What to do if your honey becomes grainy like sugar and find it difficult to squeeze out of the bottle. De-crystallization:

With the honey being 100% pure there may be some crystallization. It is just proof that it is OK. Warm it gently in the sun, the bottle is designed for this purpose, or stand it in hot water. Or you could bring a saucepan of water to a boil and then remove it from the heat. Remove the lid from the bottle of honey, and place the bottle in the hot water until the crystals dissolve.

Honey can also be warmed in the microwave. e.g. Microwave one cup (250ml) of honey in a microwave-safe container, on high. Stir the honey every 30 seconds. Be careful not to boil or scorch the honey.
